L-fucose is found in large quantities in seaweed and gum, but also in some bacterial polysaccharides. Fucose, as a component of sugar chain in glycoproteins, is widely distributed in the plasma membrane on the surface of various cells.Fucose has one less hydroxyl group on the sixth carbon atom than the general hexacarbonose, so fucose is less hydrophilic than other monosaccharides, but more hydrophobic.

L-(-)-Fucose is used in studies of fucoidan polysaccharide containing glycans and is used as a substrate to identify, differentiate and characterize enzymes such as the fucosidase(s), l-fucose isomerase(s) and L-fucose dehydrogenase(s). L-Fucose may be used to study organelles, bacterial microcompartments, involved in the degradation of plant and algal cell wall sugars.
