What's Catechinic Acid

Catechin has obvious phenolic properties, can precipitate heavy metals and proteins, so it is a phenolic substance.It

accounts for about 75 to 80 percent of the polyphenols in tea, and is also one of the sources of the bitter taste of tea.

Phenolic compounds, by their capacity to precipitate proteins, have the properties of tanning rawhide to leather in

varying sizes, and are also called tannins or tannins.Compared with some typical plant tannins (gallnut tannins, etc.),

catechins have weaker tanning properties.Catechin is a general term for polyhydroxyflavane-3-phenols, but is

sometimes specifically referred to as (+) catechin.Widely distributed in the plant kingdom, it is abundant with

tannin in the bark of Acacia catechu and gambir.The effect of tannin is very weak, but through heating and acid

treatment easily overlap to form tannin.Positions 2 and 3 have non-corresponding isomers because they contain

irregular carbon atoms.

Classification of substances:

As the precursor of tannins, catechins are widely distributed in plants and often coexist with their corresponding

flavonoids.There are two chiral (see chiral) carbon atoms in the molecule of catechin, so there are four stereoisomers :

(+) -catechin, (-) -catechin, (+) -epicatechin, and (-) -epicatechin.

Other catechin compounds, such as gallocatechin (also known as tea catechin), also have similar stereoisomers, which

are prone to undergo differential isomerization or rotation (see optical isomerization) in hot water solution and convert

to each other.Catechins are found in plants freely, either in combination with sugars (see carbohydrates) to form glycosides

or in condensation with organic acids (see condensation reactions) to form esters.

Catechins belong to a kind of Polyphenol, which have a bitter taste, so they have a great influence on the taste of tea.

The catechins in tea can be divided into three free forms (Catechin, C;Epicatechin, EC and Epigallocatechin (EGC),

esterified with two gallic acids (Epicatechin gallate, ECG and Epigallocatechin gallate, EGCG),The latter (ECG and EGCG)

were more abundant.A variety of catechins have been isolated from tea soup abroad, and purified, as a different way of use.

There are four main types of catechins: ① Epicatechin (EC);② Epigallocatechin EGC;③ Epicatechin gallate ECG;
